Courgette spaghetti with Seitan Ragu
This is a super simple and quick recipe. It can be totally vegan, it depends on the EPRONTO ragu you choose. You can surprise family and friends with absolutely zero effort, and have fun.

Cooking time: 5/10 minutes
Serving size: 2 portions
1 big courgettes
1 big carrots
Extra Virgin Olive Oil
1 jar of your favorite EPRONTO ragu. SEITAN is the vegan choice
Chopped parsley as decoration
Potato peeler or spiralizer
Wash courgettes and carrots, remove the tips (peel the carrot).
Cut them in half. Insert on the spiraliser and create spaghetti. (check video below)
Courgettes are usually rich in water so place the newly created spaghetti on paper towel and sprinkle lightly with salt to let them expel some of the water. Let them rest for like 5/10 minutes)
Carrots do not need this treatment.
In a pan, heat some Extra Virgin Olive Oil (you can add some crushed garlic for extra flavour) and cook the carrots first for 3/4 minutes. If you like the crunch, you can keep the carrots raw.
Once they are slightly caramelised, add the courgette and cook for another 3/5 minutes.
Depending on how thick you have cut the courgettes, they might cook faster than the indicated time.
Reheat your favourite EPRONTO ragu and pour on top, finish up with a sprinkle with chopped parsley.
